Lebkuchen

Lebkuchen is soft German gingerbread. Depending on the region it comes from, the ingredients include honey, spices, nuts and candied fruit. Historically, and due to differences in the ingredients, lebkuchen is also known as honigkuchen (honey cake) or pfefferkuchen (pepper cake).

Traditionally eaten during the Christmas season, nowadays lebkuchen is enjoyed all year round.
Lebkuchen dates back to ancient Egypt, around the year 1 500 bc. A cake baked with honey and allspice was laid in the tombs of kings, enabling them to feast on something sweet in the afterlife. The name lebkuchen comes either from the Old German word lebbe (very sweet) or from the Latin word libium (cakes).

Lebkuchen, as we know it today, was invented in the 13th century by medieval monks in Franconia, Germany. Lebkuchen bakers were recorded as early as 1296 in Ulm, and 1395 in Nuremberg.

Local history in Nuremberg relates that Emperor Friedrich III held a Reichstag there in 1487 and invited the children of the city to this special event where he presented lebkuchen bearing his printed portrait to almost four thousand children.
